Ableskiver (Danish Apple Pancakes)
Beat egg yolks and sugar. Add flour and cardamom, mix well. Add butter and cream. Blend thoroughly. Beat egg whites until still. Fold into batter. Heat an ableskiver pan (found in specialty shops) over medium heat. Melt 1 tsp butter in each hole. Fill hole with batter and bake for a few minutes. Turn and fry until golden brown. An alternative approach is to fill each hole only half way. Place a slice of apple or teaspoon of applesauce or jam on the batter. Fill the hole the rest of the way with batter. Serve hot with jam and powdered sugar. Makes about 3 dozen. |
