French Silk Pie

This recipe is easy, elegant and fast. It can be made in about 20 minutes. It even keeps well in the freezer. My husband is the pastor in a small town and no one will accept money from us when our two-year old twin sons occasionally go to a sitter. So this is how I pay them. People ask when can they sit again!

2 ounces baking chocolate
1/4 cup sugar
2 eggs
1/2 cup butter
1 teaspoon vanilla
1 cup heavy cream
1 pre-made crusts: Graham, Oreo, Nilla Wafer, or traditional pastry (pre-baked).

Melt chocolate in saucepan over low heat or microwave. Allow to cool. Cream the butter in the large bowl of electric mixer. Add sugar and beat until mixture is light and smooth. Add the melted chocolate and vanilla and beat until smooth. Add the eggs one at a time, beating a full 5 minutes after each addition. Turn the filling into prepared crust. Whip cream and add sugar and vanilla to taste. Put on top of filling. Garnish with chocolate curls or grated semi-sweet chocolate if desired. Chill in refrigerator or freezer till set.
