Breakfast Casserole

6 eggs beaten

18 crackers, crushed (Hi-Ho or Ritz)

22 oz cottage cheese

1 1/2 c cheddar and Monterey Jack, grated

12 oz pork sausage, browned and drained

Mix all ingredients together except for 1/2 cup of the cheese. Put mixture in a greased 9 x 13 pan and bake at 325 degrees for 45 minutes. Sprinkle remaining cheese over casserole and bake until just melted.

Can freeze if needed.
