Cranberry Chipotle Chile Pork

Serves 4

One to1 1/2 lbs boneless pork, sliced into 2 1/2 inch x 1/2 inch strips

1 T southwestern seasoning of choice &endash; or combine 1 tsp ground cumin, 1 tsp chili powder, 1/4 tsp ground cayenne, 1/2 tsp ground oregano, and 1/4 tsp salt

1-2 chipotle chiles in adobo, minced

1 tsp ground cumin

1/2 tsp ground oregano (preferably Mexican)

1/2 tsp Lime zest

juice of 1/2 lime

1 T honey, or to taste

1/4 cup chopped cilantro

salt & pepper to taste

Heat oil in 10 inch skillet (preferably non stick) over medium high heat. Saute' shallots until soft. Add cranberries and cook for 5 minutes. Add seasoned pork, chipotle chiles, cumin, oregano, and lime juice. Saute' until pork is cooked through and mixture is dry. Keep heat on and add honey to glaze. Add salt and pepper to taste.

Serve immediately (do not cover or mixture will get soggy).

Serve pork with warm tortillas, shredded queso fresco or jack cheese, and lime wedges. Sprinkle with cilantro. Black beans and rice is a great accompaniment.
