Tahitian Ham & Rice

Serves 2

1 cup cubed cooked ham

1 tsp butter

1 can (8oz) fruit cocktail

1/2 cup chicken broth

1 1/2 tbsp brown sugar

1 tsp prepared mustard

1/8 tsp ginger

1 tsp soy sauce

1 tbsp sherry

2 tsp cornstartch

1/3 cup diced green pepper

1 cup hot cooked rice

Drain fruit cocktail &endash; reserve syrup. Saute ham in butter until lightly browned. Stir in syrup, 2 1/2 tbsp broth, sugar, mustard, ginger and soy sauce. Cook over low heat about 5 minutes. Blend remaining broth and sheery with cornstarch. Stir into ham mixture. Add drained fruit and green pepper. Cook 5 minutes. Serve over rice. This recipe can be doubled.
