Crusted, yeasty Pferneusse Brot is spiced with black pepper but the key to its unique flavor is a surprise -- watermelon syrup. Since refined sugar was unavailable on the steppes and extremely costly in frontier America, resourceful German Russia bakers developed a substitute sweetner by cooking watermelon down to a thick, intensely flavored sweet paste used like molasses to flavor their bread.
