Kuchen
Kuchen -- that quintessential German Russian pastry -- is a sweet dough crust filled with custard is sometimes served plain or studded with fruit of all kinds. There's prune kuchen and peach, apple and blueberry. There's even an American influence creeping in with chocolate chip. Here, one of our Schmeckfest expert cooks demonstrates the method for testing the doneness of kuchen: shake the pan and if the kuchen filling jiggles instead of sloshes, it's ready to come out.
